Easy Quick Breakfast: Fried Chee Cheong Fun with Bacon & Eggs

I’m stoked to provide a good breakfast for my kids and to do it personally every Monday (we’ll start with one day a week!). And since I’m doing it, I need to have it done quick and easy. Last week, I made my Everything-Also-Can Egg Casserole. Today, I decided to go fusion. We’ll do a traditional Chinese breakfast with a traditional English one!

Since young, I really really loved Chee Cheong Fun (Rice Noodle Roll). The silky soft roll, with the thick sweet sauce and roasted sesame seeds. It’s so so yummy, but has close to zero nutrients! (it’s sad ya, when such yummy food are just pure yummy and nothing else!)

Chee Cheong FunAnd my kids LOVE bacon and eggs! There’s something about the salty bacon taste, and the soft fluffy eggs that just draw them to breakfast! Remember my Bacon Egg Muffins?

Bacone-Egg-Muffins_thumb.jpgThis morning, I decided to put the both together! Presenting Fried Chee Cheong Fun with Bacon and Egg! It’s so simple and it takes only 15 min to prepare everything! And the best part? The kids loved it! Here’s how!

All you need is:

A Ingredients NeededThe pre-packed Chee Cheong Fun can be found in most supermarkets, in the chilled food section. Usually with the Tofu, Noodles, Fishballs and sometimes with the non-halal items. The Chee Cheong Fun comes with the sweet sauce and chilli, but we do not need it in this dish, so you can put the sauce aside.

The bacon can be chopped into small pieces. But if your family enjoys chunky strips, that would do as well!

Heat the skillet, and toss in the bacon. Add about 10ml of water to prevent any oil splatter. I learnt this tip from the Domestic Goddess Wannabe, Diana! It really works!

B Fry Bacon in WaterWhile the bacon is cooking, cut the Chee Cheong Fun into smaller pieces. I kept them to about 2-3cm wide. When the bacon is crispy, add the cut Chee Cheong Fun into the pan. Add in another 10ml of water. Ensure that every piece of rice roll is touching the water. This would soften the rolls. Lower the fire to Medium. Do not add too much water as you don’t want a stew in the morning!

Water to Fry

You can see the Chee Cheong Fun softening, and do a slow stir-fry. Ensure all the bacon is mixed with the rice rolls. Meanwhile, beat the eggs and season it with salt and pepper. When the bacon is well mixed with the rice rolls, pour the eggs into the pan. Turn the fire back to High. Mix well. The rice rolls would start to get a little sticky now, and the water level should be close to zero. Keep stirring the eggs and bacon and rolls. When the eggs are cooked, switch off the fire and serve.

You can add some cheese if you like. For my kids, the smell of the fried bacon was enough to hurry me to serve the dish. This is a really quick breakfast to prepare! Let me know if your kids loved it as much as mine!

A fusion of traditional Chinese Breakfast with good old Bacon and Eggs
Ingredients
  • 1 Packet of Chee Cheong Fun (from the Supermarket, about 4 rolls)
  • 3 Eggs
  • 3-4 strips of Streaky Bacon
  • Salt and Pepper to taste
Instructions
  1. Chop Streaky Bacon to a preferred size.
  2. Fry in a large Skillet
  3. Add 10 ml of water to bacon to prevent oil splatter
  4. Cut Chee Cheong Fun into 2-3 cm rolls
  5. When Bacon is crispy, add in Chee Cheong Fun
  6. Add another 10 ml of water. Ensure the rolls are touching the water
  7. Lower to Medium Fire
  8. When Chee Cheong Fun has softened, stir and mix with Bacon
  9. Beat the eggs and add salt and pepper
  10. Stir into the skillet
  11. Turn the fire to High
  12. Fry and mix well. When Eggs are cooked, the dish is ready
